The diversity of dishes from fresh vegetables and fruits can surprise even experienced travelers. Many of them go to the market in search of exotic products. In the Canary Islands, they grow a special variety of potatoes, which is considered one of the most delicious in the world. Their tubers have a rich yellow tint inside, the potatoes are typically boiled in salted water until cooked and served as a garnish to meat and vegetable dishes.
A common everyday dish is a fried octopus, which is usually served with traditional Mojo sauce. Another popular seafood dish is "Sopa de mariscos" - a rich soup that may contain various types of fish, shrimp, and shellfish. Once, local fishermen cooked this soup from seafood that they've managed to catch throughout the day so the exact recipe just does not exist.
A typical daily local food is sardines, which are simply fried in a small amount of olive oil. In any restaurant, guests are offered shrimps with garlic sauce and all kinds of original squid dishes. As for meat dishes, it's worth mentioning “Potaje de berros”, a meat stew with vegetables to which fragrant spices are necessarily added. The most extraordinary local dessert is "Bienmesabe" is made from crushed almonds.
