Another gastronomic feature of Victoria is bananas - more than 15 banana species are cultivated on the island. Interestingly, locals rarely eat raw bananas. Usually, they are cut into small slices and fried. Such bananas can complement various fish and meat dishes, as well as some popular desserts. No less original garnish and a common snack among local residents is breadfruit chips.
Another widespread dish that is served even in small street stalls is stuffed pancakes. There are several hundred types of fillings for them: pancakes can be prepared with seafood, fresh vegetables, and candied fruits. This is a very popular dessert option.
Visiting one of the typical fish restaurants, be sure to try baked fish and vegetables. Every chef has their own secrets for preparing such a seemingly simple dish. Some of them bake fish in banana leaves, which gives off oily juice during cooking. This helps make fish saturated and avoid overcooking. Among exotic local delicacies, Trululu crabs stand out. This type of small crab is gathered in only a few regions of the world, and local chefs cook them with sauce. An equally interesting dish is “Tek Tek” mollusks, which can be fried, boiled, and baked with various seasonings in Victoria restaurants.
