Gastronomic traditions of the city were formed under the influence of Italy, France, Russia, and other countries, which influenced Poland in different historical periods. Everyday local food is largely pretty simple and prepared from the most affordable and common products. In local restaurants, you can try rich meat soups with seasonal vegetables. One of the most original first dishes is Polish Tripe Soup "Flaki".
Bigos" is also very popular in local restaurants - this is how they call fried cabbage with sausages. You can also try borscht, which is considered one of the most popular soups in Ukraine and Russia. In local restaurants, they serve a very original version of borscht called “Barszcz biały”. It is customary to prepare it using a special type of rye flour sourdough, potatoes, and marjoram.
Small family restaurants where one can try interesting wild game dishes are especially popular with Lodz guests. Soups and pastries with mushrooms are no less popular in such restaurants. Before the main course, restaurant guests are offered original appetizers, many of which may seem rather unusual to foreign visitors. A pretty popular snack is "Śledzie w śmietanie" - pickled herring with sour cream and onions. A tasty meat snack is “Boczek ze śliwką” - prunes wrapped in bacon.
