Local food experts practice rather odd ways of food processing. Fish and meat are commonly roasted on the open fire, on charcoal or steamed. Such ways of foods processing allow to preserve not only the taste and eating qualities of the treats but to preserve all the vitamins as well. For Laulau dish preparation the cooks use all the fish species and some culinary experts give preference to pork. Fish or meat is wrapped in huge leaves of the taro plant. Then the treat is steamed. The dish is commonly unwrapped right before eating.
Meat dish fans will love the spiced beef “pipikaula” which is made with rich spicing. The ethnic cuisine is not limited to fish and meat dishes only. A popular ingredient of many local treats is considered to be the fruits of bread tree. These can be served as solo treat. Small breadfruit of long shape is baked whole. The dish is named Ulu.
