More and more people around the world choose organic food, and so there’s no wonder why hoteliers try to “be in trend” and offer more healthy choices for their customers. Marriott Hotels in the UK is no exception. The company announced new partnership with Hugh Fearnley-Whittingstall’s River Cottage that will provide local and sustainable food to Marriott hotels.
First new menus with healthy food will appear in two hotels of the internationally famous company. These are Hollins Hall Hotel & Country Club in West Yorkshire and Marriott hotel in Cardiff. Once approved, the menus will be spread to 50 Marriott hotels across the UK. New dishes that are to appear include smashed celeriac, lamb shoulder and organic Welsh lamb with chili and tyme. All the products come from Graig Farm in Newton, and beef briskets in a red wine sauce with rosemary potatoes and anchovy are slow cooked in Swillington Farm that is located close to Leeds.
River Cottage is an organization that represents several local suppliers that offer healthy and sustainable food choices, as well as menu planning.
Marriott also reports that it will increase the percentage of locally produced food in its hotels in the UK the share of local food (the food sourced within a 97km (60mi) radius) will be no less than 80%. Restaurants will also update their menus more often. If previously new dishes were added every quarter, now visitors are able to try something new almost every day! Finally, sustainable restaurants in Marriott hotels have not only organic meat and chicken, but must also reduce their food wastage by at least 5%.
