Hotel industry keeps changing to meet newest requirements and demands of modern travelers. Food and beverage are no exception. According to industry insiders, the days of four-course corporate lunches and meetings with lots of hearty meal are over.
Health and wellness trends don’t seem to go away, and so hotels have to change the food they offer in order to provide guests with lighter and healthier choices. The overused term “millennial”, nevertheless, is a real power as travelers from this age group will keep shaping the hospitality industry in years to come. Healthier and more plant-based food, vegan, vegetarian, gluten-free not many years ago such food was treated mostly as an addition for visitors with special needs. Nowadays, many hotels build their menus around these options. Instagram is another influence as visitors crave for better looking and healthier food that they can take a picture of.
Even five years ago a typical lunch at a hotel consisted of three or four courses. After such a luncheon, many guests became drowsy and not ready to work. According to a 2016 study by Hilton, as many as 39% of business meeting attendees in the US, the UK, and Germany were asleep or drowsy after a heavy lunch. Therefore, many hotels have started offering lighter food two or three times during a daylong meeting. Hilton even launched “Meet with Purpose” program with healthy snacks and a salad bar. Famous for its hotels in Germany, Frankfurt-based Steigenberger brand has launched its Green Meetings program in 13 hotels of the brand. These hotels serve organic snacks from regional farmers, lots of fresh seasonal products, as much of sustainable food as possible, and fair trade beverages. Drinking water is filtered and prepared by Steigenberger at own facility and then packed in reusable glass bottles.
