In Marche you can try Vincisgrass – lasagna with chicken liver. Minestra di Lumancelle soup is also interesting; it has a unique type of pasta in it. Minestra di Trippa, which is made with tripe, is usually served with battuto or lard with spices. In this region, they love meat courses. They usually use a tender and juicy meat with minimum fat consistency. They prepare it a variety of ways. For example, pilotto – a piece of meat, backed with lard, or porchetta, which is a fried boneless pork with herbs.
In Marche they love sausages and know how to make them. Prosciutto di Carpegna, a salami with juniper – one of the most unusual dishes of the region. Soppresse, Salsicce, Ciauscolo – all those sausages are worth tasting. Among different types of cheese pay attention to Casciotta d'Urbino, Raviggiolo del Montefeltro cheese, and Slattato. Try ascolane, an interesting dish, made of olives, stuffed with meat and fried in rye and egg.
The variety of desserts will melt your heart, even if you are totally indifferent to sweets. Here you will find honey balls Cicerchiata, and Bacciate with pine nuts, and Frustega cookies, made from the grape must. Migliaccio has an original taste, and has pig’s blood, sugar, and an orange and a tangerine peel in its content. The most popular alcohol drinks in Marche are Verdicchio white wine and anise liqueur Anisette. As anywhere else in Italy, you will find here many types of coffee to any taste, and there is also juice in the menu of any café.
