The Gleneagles Hotel in Perthshire, Scotland, has announced a very interesting new service in its restaurant. From now, guests of the hotel can choose the beef they want to order just like they choose wine or other drinks.
Currently, the restaurant’s beef book contains 6 types of beef, four of which are native breeds and 2 continental breeds. The book was developed together with Simon Howie, local butcher. He is known as a trusted partner who has supplied the hotel with fresh and quality beef for more than 25 years. Guests of Deseo restaurant that is located in the Gleneagles hotel can order the beef of different types for dinner. In addition to standard breeds, each week there will be a new “guest breed”. This way, guests of the restaurant will be able to get acquainted with shades of tastes of Scottish cattle.
In order to understand the peculiarities of each breed, the restaurant’s staff will undergo a special training concerning the beef menu. Just like many staff workers are trained to understand subtle differences in different sorts of wine, the hotelier is sure that its restaurant staff must understand the differences and peculiarities about the meat that is on offer on a particular week. Currently, customers are increasingly interested in quality and origin of the food they eat, so the Gleneagles Food and Beverage Director Alan Hill is sure in success of their new initiative.
