News Food and beverage is a whole industry and one of the main sources of income for hotels, so there’s nothing strange that hotels try to invent new dishes, new designs for their restaurants and bars, and offer new services to attract more visitors. Marketing firm JWT has even prepared a report dedicated to main trends in food and beverage sphere in 2013.

According to the report, allergen-free food will be very popular this year. Food allergy is rising worldwide. Currently, 1 in 12 children in America has food allergy, and the situation is almost the same in different parts of the world. Therefore, hotels offer more dishes that are gluten-free and allergen-free.

Chia seeds are told to become one of the hottest products this year – the Aztec superfood is rich in protein, antioxidants, omega-3 fatty acids and fiber.

With water supply quickly decreasing and the world to expect a serious shortage of fresh water by 2030, new desalination technologies become more and more important. Hotels also start using these technologies to provide their guests with water.

Here is one very interesting trend – faux meat. As many people decide not to eat meat because of budget, environment or health issues, products that substitute or taste like meat become more and more popular. Another trend connected with this one is humane food – many consumers want to eat meat, but they are concerned about the treatment of the animals they eat. There are also many people, who are on a diet, and people to control the food they eat in order to stay in shape. They will be very interested in mid-calorie food menus – dishes made by food scientists. These dishes are delicious and healthy at the same time.

Finally, almost no dish in a restaurant is possible without candies or a piece of cake, but many consumers feel guilty about eating them. New candies and caramels are enhanced with vitamins and sweetened by cane juice or tapioca syrup, so they are less harmful and healthier.
