Waldorf salad remains the undisputed leader among vegetable dishes. The recipe of this salad was initially developed yet at the end of the 19th century. Despite the fact that this salad was developed in New York, it has become very common in Indianapolis. Nowadays, literally all restaurants in the city have Waldorf in their menus. Its recipe is very simple. To make one serving of the salad, take 2 celery stalks, one small fennel bulb, one green apple, and 4 walnuts. To make a dressing for the salad, you will need 2tsp of mayonnaise, 4tbs of heavy cream, lemon, salt, and white pepper.
To make the salad, cut celery, fennel, and apple into thin sticks. Roast the nuts in a frying pan and then smash them. Mix all ingredients. The make the dressing, mix mayonnaise and cream, add salt and pepper, and then add lemon juice and zest. The ready salad is dressed right before the serving.
Experienced chefs have an important secret regarding this salad. Apples darken very fast once they are cut. In order to keep their natural color longer, sprinkle apple slices with lemon or lime juice.
