Traditional Chisinau cuisine cannot be imagined without delicious pastries - here they bake excellent cakes. The most popular one is "Plăcintă" - a big round cake with filling, which is typically baked in a special oven. Cakes of this kind were first prepared as early back as in the times of ancient Rome. The name of the dish and its appearance hasn't been changed since then. Cottage cheese or soft cheese often serve as a filling for the cake. However, it may also be prepared with potatoes, cabbage, pumpkin, and various types of meat. Sweet varieties of the cake may contain different types of fruit.
An important part of the traditional cuisine of Chisinau is dairy products. Here they make excellent brined cheeses, the most popular among which is bryndza. Typically, this kind of cheese is made from sheep's milk; there are also bryndza varieties made from goat and cow milk. Bryndza may be served as a separate snack, used as a filling for various pastries, added to salads and other interesting dishes.
In Chisinau restaurants, guests are offered a broad choice of hearty soups. The most common type of the first course is chorba. This sour soup is cooked with the addition of a brew made from wheat bran. Its essential ingredients are meat, beans, and potatoes, as well as various seasonal vegetables, if available. In most restaurants, the first courses are usually complemented by slices of Mămăligă or all kinds of savory pastries.
