Adherents of a healthy diet will surely like Aarhus traditional cuisine, as most of the dishes are steamed here. Vegetables are typically subjected to minimal heat treatment, and dishes from them turn out to be simple but incredibly tasty. An important component of local gastronomy is all sorts of sandwiches, the preparation of which has long become a kind of art here. They are necessarily prepared from fresh rye bread, fish or meat slices, various vegetables, and fresh herbs. Since some sandwiches are "multi-layered", they are usually served with a fork and a knife. It is customary to east such complex sandwiches layer by layer. In local restaurants, some sandwiches may cost 30 crowns and more.
The regional menu offers a variety of first courses, and potato soups are considered classics. Be sure to try mushroom soups in autumn. Some types of first courses are served in keeping with a good old tradition - in a bread bowl. The pride of the locals is premium bacon - some of its types have been prepared according to unchanged techniques for hundreds of years. Several large farms in the vicinity of the city breed special pigs. In one of the main squares of Aarhus, you can even find the Well of Pigs monument erected as one of the main agricultural symbols of the region. Those with a sweet tooth will appreciate the variety of local bakeries and pastry shops, some of which are historic. They serve delicious fruit-filled pastries, all kinds of pies, as well as beautifully decorated cakes.
